by Suzan Temizer, three birds do wine
Three Birds Do Wine hosted the first cellar door event for the Tolson family, owners of Broke Estate wines over a sumptuous feast at the celebrated Butcher’s Daughter in Crows Nest by the Creative Director, innovator of food and floristry Bridget Ditte.
Exhilaration at moment of arrivals, with the meeting of country and city, land and sea, vintages and varieties.
A three course communal dining experience of land and sea with smoked and roasted goods from Bridget’s homegrown Old Bar garden in Bowral, NSW was shared with the guests. Each course was paired to Broke Estate wines from the famed Broke-Fordwich region in Hunter Valley.
We listened to the story of the Tolson family and learned of the legacy of the land that is Broke Estate. We conjured the spirit of their vision, passion, sense of family among the rare bibelots and blooms, shared plates and hopes, drank wine, compared vintages, found new friends and some from afore.
The legacy of the terroir, each vintage had a story to tell. We listened, we drank, we feasted. No different to the Greeks, Persians and Romans afore.
We will all come, we will all go but what matters is we listened.
